Stuffed Meatballs ~ Easy Recipe

I went to fix spaghetti for supper the other night and was wanting something different with it. Not the same ole, same ole, ya know? So, I got to digging around in my stack of "new recipes I need to try" to see what I could find that would jazz up this age old meal. And voila... I found it! Stuffed Meatballs! I was gonna be able to get my hands dirty, I had the ingredients on hand, and it looked like fun, which is all the more reasons to make a recipe! After the deed was done and all the results were in....Let me just say, I can't believe this stayed in my "need to try stack" so long! They were great and everyone loved them!

Ingredients ~ 

1.5 lbs of Ground Beef
2 Eggs, Beaten
1 TBS Italian Seasoning
3/4 tsp Salt
3/4 tsp Black Pepper
3/4 tsp Garlic Powder
1/4 Cup Parmesan Cheese
1/3 Cups Italian Dried Bread Crumbs
3 1-Ounce Individually Wrapped Mozzarella String Cheese

To Do ~

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with olive oil. Set aside.

Add Ground Beef, Eggs, and Seasonings to a medium bowl. Using your hands, mix ingredients together until just combined. Add Parmesan Cheese and Bread Crumbs. Continue to mix util all ingredients are combined.

Put mixture onto a clean surface, such as a cutting board and shape into a nice, well shaped, rectangle. Using a knife, cut the rectangle into 24 squares.

Cut each cheese stick into 8 pieces, so you have 24 pieces total. Press one into the center of each of the squares.

Roll each square into a tight ball. Place meatballs onto your prepared baking sheet.

Bake for 15-18 minutes. Keep a close watch on them so they don't overcook... you don't want your cheese coming out of the meatballs!
